http://www.bybyte.com/ makes a double din enclosure for a 7"touchscreen LCD and a mini ITX computer. installing X86Android will become the start of a real Android car stereo.
Except, it needs on screen controls. I.E. always on screen back button, volume and mute buttons, etc....
I guess I need to start learning Android programming...

Build your car stereo and then ask the cyanogenmod guys if you can port their rom over to your stereo. They have the android buttons software coded in already.
